  • 2 tbsp soy sauce.
  • 1 tsp sugar.
  • 1/2 cup chicken stock.
  • 3 tbsp black bean sauce.
  • 1 tbsp corn starch.
  • 1 tsp sesame oil.

  • 1 lb (450g) beef (ribeye or sirloin), thinly sliced.

  • 1 lb large shrimp (peeled, leaving the tail segments intact, and de-veined).
  • 3 large garlic cloves (minced).
  • 2 tablespoon Shaoxing wine.

  • 1 egg white (lightly beaten).

Start with mixing the shrimp coating all ingredients in a medium size bowl. Add the shrimp, throw or mix to coating with hand. Refrigerate for approximately half an hour.

Meanwhile, prepare the sauce by mixing all of the ingredients for the sauce in a little bowl. Put aside.

This isn’t the conventional Hunan shrimp preparation system I am aware of, but I must say I enjoy the outcome. We will stir fry them. In a wok, heat 3 tbsp of oil on high temperature. As you find that a whiff of smoke, then put in the ginger and the garlic and stir fry. Add the shallots, stir and lower heat to moderate. Stirfry for about 2-3 seconds, or until the shallots are tender and caramelized.

Twist back the heat to high, bring the shrimp, organizing them in one layer. Cook for approximately 1 minute then reverse and keep cooking before the fish is pink on each side.

Drizzle your wine within the shrimp and blend well. Stir in the sauce, then pour it and mix well. Stir fry for approximately 12 seconds, or until the beans are well-coated along with also the sauce begins to bubble.
